Ingredients

Method

  1. Preheat the oven to 200°C fan-forced. Mix together the dry ingredients; tapioca flours and salt.
  2. Next add the wet ingredients; milk, oil, eggs and ricotta into the flours and mix well with your hands to combine and the flour is fully hydrated.
  3. Fold through the cheeses ensuring they are well distributed through the dough.
  4. Roll into golf balls sized balls and place on a lined oven tray and bake for 25–30 minutes or until golden. The aim is to have a nice crisp golden outer crust and an chewy cheesy inside that is something like a mochi texture! Best enjoyed HOT!

Notes

If you can’t find the “sweet” and “sour” tapioca flour then just use the tapioca flour / starch you find in most large supermarkets or Asian grocers.
