Smokey Sausage and Egg Breakfast Muffin, recipe by Hayden Quinn

Ingredients

  • 4 Italian pork sausages (sweet or spicy)
  • 2 tsp smoked paprika
  • 1 tsp chilli flakes, optional
  • Olive oil, to fry
  • 2 tsp unsalted butter
  • 2 ripe medium tomatoes, cut into thick slices
  • 4 eggs
  • 4 English muffins, toasted and buttered
  • 4 slices burger cheese
  • 40g rocket leaves

Method

  1. Remove the sausage meat from the skins and place in a bowl. Add the smoked paprika and chilli flakes and mix with your hands to combine evenly. Form 4 even, thin patties and set aside on a tray.
  2. Heat a little olive oil in a frying pan over medium heat and cook the patties for around 3 minutes each side or until golden. Drain on some paper towel.
  3. Return the pan to the heat with a little more oil and a knob of butter. Fry the tomatoes until golden and tender and season with salt and freshly ground black pepper.
  4. Then, fry the eggs sunny side up until crisp on the bottom and until the whites on top are just cooked. Season with salt and freshly ground black pepper.
  5. To assemble, place the patty on the base of the muffin and top with cheese followed by tomato, rocket and an egg.
