Spicy Pineapple Margarita
I created this margie with the legendary Aussie cricketer Adam Gilchrist using his epic tequila El Arquero Blanco (they also have a Reposado in the range). This was paired with my Chicken Al Pastor Tacos and hence why I wanted to use pineapple and spice to pair nicely with the tacos! A delicious drink for those that like a little kick, perfect for summer days and fun to make for friends with only a few simple ingredients.
Ingredients
- 45ml blanco tequila
- 15ml orange liqueur
- 20ml pineapple juice
- 20ml fresh lime juice
- 5ml jalapeño sugar syrup
- Ice
To serve
- Tajin + salt rim
Method
- Mix equal parts Tajín and salt on a small plate. Run a lime wedge around the rim of a rocks glass (or margarita glass), then dip/roll the rim in the Tajín and salt mixture.
- Add the tequila, orange liqueur, pineapple juice, fresh lime juice, and jalapeño sugar syrup to a cocktail shaker. Fill the shaker with ice and shake hard for 10–15 seconds until well-chilled.
- Fill the prepared glass with fresh ice. Strain the shaken cocktail into the glass and garnish with a pineapple wedge and a thin jalapeño disk. Serve immediately.
Notes
You’ll find Tajin at larger supermarkets and Latin American grocers.
