Steak with Diane Sauce

The French may think they are kings of sauces, but go to any local pub or club and the Diane sauce is going to be ruling over the steak section.

Steak W/ Diane Sauce, recipe by Hayden Quinn

Ingredients

Steak

Diane sauce

Method

  1. Getting the steaks to room temperature is very important, so take them out of the fridge about 20 minutes before cooking. Season the steaks well with sea salt.
  2. Heat a large frying pan over high heat, then add the olive oil. Cook the steaks for 3 minutes on each side or until nicely coloured and cooked to your liking. Transfer to a wire rack and leave them to rest while you make the sauce.
  3. To make the Diane sauce, reduce the heat to low and add the butter to the pan juices in the same pan. Add the onion and garlic and cook, stirring, for about 3–4 minutes or until softened.
  4. Add the tomato sauce, then the Worcestershire sauce, and stir to combine. Pour in the cream and simmer gently for about 2 minutes or until slightly thickened. Season.
  5. Slice your steak, serve with the sauce and rip in.
